Bandeja Paisa [gluten-wise]
We've veganized this hearty, comforting, traditional Colombian dish! It features a delicious red bean + veggie stew and sautéed TVP mixture over brown rice, topped with fried plantain slices and green onions. The stew is the star of the show, incredibly flavourful from a mixture of onions, potatoes, red kidney beans, tomatoes and spices.
